Fruity Turkey Tagine

This recipe is great for using up your leftover turkey as well as the leftover veg from Christmas day. It’s packed full of flavour and the perfect solution for a hassle free boxing day meal.

Ingredients:

  • 1 tbsp olive oil
  • 1 red onion, thickly sliced
  • 3 carrots, thickly sliced on the diagonal
  • 3 parsnips, thickly sliced on the diagonal
  • 2 garlic cloves, crushed
  • 2 tsp ras el hanout
  • 500ml turkey or chicken stock
  • 400g can chopped tomatoes
  • 400g can chickpeas, drained and rinsed
  • 140g mixture of dried apricots and prunes, roughly chopped
  • 300g leftover turkey, cut into chunks
  • Drizzle of clear honey
  • 1/2 small bunch coriander, roughly chopped
  • 1 tbsp flaked almonds
  • Couscous to serve

Brie, Apple And Onion Tart

Have you got half a cheeseboard leftover and aren’t sure how to make the most of it? Try this delicious Brie, apple and onion tart! It’s quick to make and can chopped up and eaten as a snack or served with a salad for a meal.

Ingredients:

  • 320g pack ready-rolled all butter puff pastry
  • 1 tbsp olive or rapeseed oil
  • 3 large onions, halved and sliced
  • 2tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • Small bunch thyme, leaves picked plus a few sprigs to serve
  • 1 eating apple
  • 100g cranberry sauce (or chutney)
  • 175g brie, sliced (or other cheese)

Turkey Carbonara

If you’ve got more leftover turkey than you know what to do with, this quick and easy dish is a Christmas take on the classic carbonara dish that everyone will enjoy. If you’ve got kids to feed, this dish always goes down a treat!

Ingredients:

  • 30g unsalted butter
  • 4 bacon rashers, thinly sliced
  • 2 tablespoons pine nuts
  • 4 eggs, beaten
  • 300ml thickened cream
  • 3 garlic cloves, crushed
  • 1/3 cup finely grated parmesan, plus extra to serve
  • 500g spaghetti
  • 2 cups (320g) shredded cooked turkey
  • 2 tablespoons chopped flat-leaf parsley, plus extra to serve

Roast Pork Rice Paper Rolls

We love Japanese food at Supply Desk HQ! Turn your leftover roast pork into some delicious pork rice paper rolls to snack on on Boxing Day.

Ingredients:

  • 100g rice vermicelli noodles
  • 2 cups roast pork, sliced into thin strips
  • 1 small carrot, peeled, sliced into thin strips
  • 1 cucumber, sliced into thin strips
  • 2 shallots, sliced
  • 1/4 cup mint leaves
  • 1/4 cup basil leaves
  • 1/4 cup chopped, roasted peanuts, plus extra to serve
  • 16 x 22cm rice-paper wrappers
  • 1/2 cup hoisin sauce, to serve
  • Sweet chilli dressing

  • 200g soft brown sugar
  • 150g self-raising flour
  • 40g cocoa powder, sifted
  • 3 large eggs, beaten
  • 50g dried cranberry
  • 100g macadamia nut
  • 60g cranberry sauce
